They have, and they haven't. I'm still going to India -- in fact, I land in Bangalore in about 30 hours -- and my itinerary is generally unmodified. (I fly out of India from Mumbai, but I had not planned to spend much time there anyhow.) I suspect, however, that the attacks may change my plans in many smaller ways.
Most broadly, I will probably now spend more time outside large cities than within them. And while I never planned to stay in ritzy hotels or eat in chic restaurants, now I'll avoid them deliberately. Among my largest concerns is that I'll spend more time looking over my shoulder than in more interesting directions.
After failing to pick up much Romanian, I have been looking forward to reading local and national newspapers over breakfast in India. Now I'll keep a particularly keen eye on national security news.

I felt I should respond as I lived in both Madrid and London after the attacks. The difference is that I was in both places at least a year or more after the attacks, so things had settled more than is currently likely in Mumbai. Also, I think at least personally the idea of attacks being in hotels or cafes (and with hostage situations, etc) is more nerve racking than the transportation bombings of Madrid and London. I didn't feel unsafe in either location (or more unsafe than anywhere else), it was quite similar to taking BART or the T under heightened security warnings. I will admit that my paranoid side got the best of me once and my friend and I got off the Tube because a man near us left his briefcase on the train and got off himself. But besides that, I'm sure its something we're all more conscious of now rather than 10 years ago, but I doubt it will hinder your travels or that you will even find yourself especially paranoid! I'm glad things are going well so far, keep writing!
